Walla Walla Relish

 

Ingredients

  • Olive oil-flavored vegetable
  • 1/8 ts Pepper
  • 1 c Diced seeded tomato
  • 1/8 ts Salt
  • 1 1/2 tb Chopped seeded jalapeno
  • 2 tbs Thinly sliced fresh basil
  • 2 tss Extra-Virgin Olive Oil
  • 3 cs Sliced Walla Walla or other
  • 2 tss White wine vinegar

Directions

  • Arrange onion slices in a single layer on a jelly-roll pan coated with cooking spray
  • Bake at 400 degrees for 15 minutes
  • Turn over the onion slices, and bake an additional 25 minutes or until tender and lightly browned
  • Let cool; coarsely chop onion
  • Combine the chopped onion and remaining ingredients in a bowl; stir well
  • Let stand at room temperature 20 minutes before serving
  • Yield: 2 cups (serving size: 1/3 cup)
  • Per serving: 35 Calories; 2g Fat (40% calories from fat); 1g Protein; 5g Carbohydrate; 0mg Cholesterol; 342mg Sodium Serving Ideas : Serve relish with grilled salmon or chicken
  • NOTES : Vidalias or other sweet onion can be substituted for the Walla Walla onion
